  • 4 medium mixed peppers

  • 2 tbsp extra-virgin olive oil

  • Salt

  • Pepper

  • Garlic Powder

  • Dried oregano

Directions

  • Preheat the oven to 425°F.
  • Prepare your baking sheet with parchment paper.
  • Cut the peppers into quarters or to the desired size and remove the seeds and membranes.
  • Spread olive oil evenly over peppers and season to taste with salt, pepper, garlic powder, and oregano.
  • Roast the peppers in the oven for 15 to 20 minutes or until they are soft and some of the tips are golden brown.

  • In a medium saucepan, cook the balsamic vinegar for 10 to 20 minutes or until boiling over medium-low heat, allow the balsamic vinegar to reduce to a thicker glaze and set aside.

  • Drizzle olive oil over the salad and then repeat the process with the balsamic reduction and add salt and pepper to taste.

A salad that could not be missing from this list is the Spinach and Strawberry Salad. The fact that it has strawberries is already romantic for me.

This salad goes great with red and white meats like chicken and is perfect for special occasions because it looks super cute and fancy but it is really easy to make.

Ingredients

  • Salad Ingredients
  • 10 oz of baby spinach

  • 1 lb. strawberries

  • ¾ cup raw pecans

  • ¾ cup shredded feta cheese

  • ½ small red onion

  • Dressing Ingredients
  • ¼ cup balsamic vinegar

  • 3 tbsp extra-virgin olive oil

  • 1 ½ tbsp poppy seeds

  • Salt and pepper to taste

Directions

  • Toast the pecans: chop them up and place them on a baking sheet lined with parchment paper. Bake them at 350 degrees for 5 to 10 minutes, remember to stir occasionally so that the pecans brown evenly.
  • Cut red onions into thin slices and soak in water until soft, drain and reserve.
  • In a bowl, mix the spinach, strawberries onions, and a little of the dressing until moistened.
  • Add the feta, and the toasted pecans and toss. Serve and enjoy!

Note: If you don’t have an oven you can toast your pecans in a skillet over medium heat until browned it will take from 2 to 5 minutes.

4. Scalloped Potatoes

Ingredients

  • ¼ cup butter

  • 1 large onion diced

  • 2 cloves garlic, chopped

  • ¼ cup flour

  • 2 cups milk

  • 1 cup of chicken broth

  • ½ tsp salt

  • ¼ tsp ground black pepper

  • 3 lbs. thinly sliced white potatoes

Directions

  • Melt the butter, and add the onion and garlic over medium-low heat. Cook for 3 minutes or until onion is softened, then add flour and cook for 1-2 minutes longer.
  • Lower the heat and mix in the milk and chicken broth. Add to the previous mixture a little at a time until it thickens. Keep adding a little liquid at a time while whisking until smooth. Add salt and pepper to taste and boil for about 2 minutes.
  • Grease a baking dish and add the potatoes to the bottom, season with salt and pepper, and pour a little of the cream sauce on top.
  • Repeat the process in layers up to the top of the baking dish or finish with the cream sauce. Cover and bake for 45 minutes.
  • Uncover and bake for another 35-45 minutes or until golden brown and potatoes are tender and the top is golden brown.
  • Let cool slightly and serve.

Note: I recommend making this dish before the chicken or at least at the same time, as it is important to let it cool for at least 15 minutes before serving so that the sauce thickens.

5. Ratatouille

  • 1 small eggplant, sliced and the slices cut into quarters

  • 1 small onion, sliced and chopped

  • 1 tbsp olive oil

  • Salt and pepper

  • 1 can diced tomatoes, drained

  • 1 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp herbs de Provence

  • 3 cloves garlic, minced

  • 2 tbsp chopped fresh basil

  • Salt to taste

Directions

  • Preheat oven to 375º F.
  • Blend all sauce ingredients in a blender until smooth and season with salt and pepper to taste.
  • Spread the sauce in a thin layer in a medium-sized round or oval casserole dish.
  • Place the tomatoes, zucchini, eggplant, and onion in a spiral, alternating them, make sure they are all the same size, drizzle with olive oil, and season with salt and pepper to taste.
  • Bake for about 30 to 35 minutes or until vegetables are tender and sauce is bubbling.
  • Let cool slightly, serve, and enjoy!

  • Bake for about 30 minutes or until the carrots are tender, you can prick them with a fork to see if they are tender.

  • 1 celeriac root

  • 900ml milk

  • 200g butter

  • 2 tsp grated nutmeg

  • In a medium saucepan, place the chunks, pour milk to cover, and boil for 20 to 30 minutes.

  • ¼ tsp pepper

Directions

  • Cook the fettuccine in water with salt and oil for 12 minutes or until aldente, and save some pasta water.
  • In a frying pan, melt the butter, over medium heat, brown the chopped garlic and add the heavy cream.
  • Reduce the heavy cream and cook for 5 to 8 minutes, then add half of the Parmesan cheese to the mixture and whisk well until melted.
  • Mix the Alfredo sauce with the fettuccine pasta and add half of the Parmesan cheese. Garnish with more Parmesan cheese and add a little pasta water if necessary so it doesn’t thicken too much.
  • Garnish with Italian parsley, serve, and enjoy!

  • In a medium saucepan, melt the butter, add the diced vermicelli pasta, and cook for about 3 minutes or until the pasta is golden brown, stirring occasionally.
  • Add the grated onion and chopped garlic to the pan and cook for about 4 minutes until the onion is soft but not browned, stirring occasionally.
  • Add the rinsed rice and cook for about 3 minutes, until the edges of the rice begin to turn transparent, stirring occasionally.
  • Add the broth, thyme, rosemary, and salt, and bring to a boil.
  • Once the water has reduced, reduce the heat to low, cover the pan, and simmer until all the liquid is absorbed about 10 minutes.
  • Once done, let the rice rest and add the parsley.
  • Serve and enjoy.
